i have waited for this day ever since i decided to take up the pastry program. CROISSANTS. in all its magical buttery glory. made them a while ago, by hand, but all the folding/chilling came to a pale/unenthusiastic crisp that was soo unlike the real deal. so alas… dough sheeter to the rescue! passing the dough to and fro through the conveyor belt equaled flakey triumph. sigh… now if only to procure a sheeter.
