ube is tagalog for purple yam. beautiful shades of pinkish purple to light lavenders when steamed and prepped for ube halaya (sweetened ube jam). used the ube halaya we made in class for this recipe, thus the cake is more moist and has the subtle and bright flavor of ube (rather than the artificial ube powder based jam). made an ube buttercream to top it all off. next time i’ll definitely use food coloring to give it its signature ube cake look. i must say, even tho red ribbon’s ube cake was childhood want, my version is a lot more schweeets 😉
